WHERE AND WHO

The “Agua Sarca” farm is located in the coffee growing region of Nuova Segovia. His owner, Mr. Isacio Javier Albir own this farm from 16 years. All the coffees produced have great agronomic and quality control  to achieve their optimum point of ripeness and the best processes of processing and drying.

FROM THE CHERRY TO THE BEAN

Coffee cherries are processed using the cold anaerobic fermentation. It consist to put the whole cherry into barrels and let them soak in water without oxygen. This process helps to express all the fruitiness and the brightness of the cherry but, at the same time, most of anaerobic coffee don’t taste sour or bitter but have a creamier body.

ABOUT THE VARIETY

MARACATURRA

Maracaturra is a Brazilian hybrid of large bean Maragogype and Caturra. It is thought to have occurred naturally in the late 1800s.   It can mainly be found in Brazil, El Salvador and Nicaragua. It has big leaves and berries. In terms of taste Maracaturra has bright acidity with tropical fruit notes.
