WHERE AND WHO
Finca El Cerro is an historical Salvadorean coffee plantation which grows coffee from more than one and half century. The farm is located in Apaneca Llamatepec mountain range in South – West part of El Salvador. Coffees grow at 1400 – 1500 meters above the sea which is ideal for specialty coffees.
FROM THE CHERRY TO THE BEAN
This coffee is processed using the classic natural dry fermentation. Cherries are dried in a tank for the first 48 hours, then all the cherries are placed at the sun for further drying. The natural process helps to express all the round and sweet notes.
ABOUT THE VARIETY
PACAS
This variety is a natural mutation of Bourbon is similar to Caurra and Villa Sarchi. It produce medium – small beans and is susceptible to common coffee disease. As well as the other Bourbon mutation the plant grows smaller than the original Bourbon. This characteristic helps to increase the possibility of placing plant closer together and increase total amount of production of each farm. This variety was discovered in 1949 and in the following years grown in the country. Nowadays it accounts about 25% of the total country production.
