Finca el Diviso is located in the Hulia region, in the South – West of Colombia at approximately 1850 masl. His owner, Vidal Hernando Vallejo Arenas, bought the farm 27 years ago and nowadays he owns more than 12.000 coffee trees. All the processes are done by his family members which provides to keep the quality at highest level.
FROM THE CHERRY TO THE BEAN
The transformation process for this coffee is Natural Anaerobic. Coffee cherries are picked manually and after the selection they are fermented for 24h without the water, then cherries are washed with clean water and laid on patios under solar light until they achieve the correct moisture percent.
ABOUT THE VARIETY
This variety is a cross mutation between the Red Bourbon and Typica, probably originated from Equador. It has acquired the sweetness and the body of Red Bourbon and the bright taste and acidity of Typica. This variety has rapidly increased in popularity in the country thanks to its excellent cup profile and the conquest of various international competitions.
