TOFFEE, RED APPLE
WHERE AND WHO
La Esperanza Farm La Esperanza ("Hope" in Spanish) is the name of Fidel's 1.5 hectare coffee farm, chosen to represent the hope of producing specialty quality coffees and becoming the region's best producer. Fidel comes from three generations of coffee farmers, the land passed down as heritage from his father. The farm originally had old Catimor and Pache varieties, but Fidel has spent the last five years replanting entirely with Yellow Caturra. This variety thrives in Northern Peru’s terroir and delivers exceptional cup quality and yields.
FROM THE CHERRY TO THE BEAN
The cherries are hand picked during the harvesting season and they directly undergo washing and sorting before heading to solar drying beds on the farm for 25-30 days. The natural processed coffee showcases flavours intrinsic to La Esperanza.
ABOUT THE VARIETY
YELLOW CATURRA
The variety Caturra is a natural mutation of the Bourbon variety. It was first found in Guatemala in the mid-1900s. It is a variety characterized by the smaller size of plants, which allows them to be planted closer together, ensuring greater productivity per unit of surface area. In Colombia, the Caturra variety became widespread in recent years when, in 2008, the government encouraged the replacement of older plants in favor of the new variety, which is more resistant and more productive.
