WHERE AND WHO
This coffee cooperative is located in the region of Sidama. In the cooperative now a days work more than 300 small farmer with a total extension of 375 hectares. Sidama region is splited in four different areas depending on the cup profile of their coffee. Shantawene farm, where this coffee come from, is known for the sweetness and the fruitiness of hers coffees. His owner, Asefa Dukamo owns the farm from 27 years and is completly focused on sustainable and renewable agriculture. He carry on the idea of good, sustainable and traceable cup of coffee.
FROM THE CHERRY TO THE BEAN
This coffee is processed with the classic natural process. The whole cherries are lay on raised bed and exposed to the sun until they reach the right percentage of moisture left. All the beds are covered with shade netting to protect the coffee during the hottest hours of the day. When the cherries achieve the correct moisture level are depulped and packed for the export. The natural process helps the cherries to express all the fruity and sweet notes of the Shantawene coffees.
ABOUT THE VARIETY
HAIRLOOM
Heirloom coffee is a compound phrase for several naturally occurring types of coffee found in Ethiopia. This term is commonly used to refer to local types, many of which are still present in the wild today. In this case the exact variety of this coffee is J.A.R.K 74/158, selected to for enhanced pest resistance and higher yields.
