Agua Sarca (Washed Ice Drip)

WHERE AND WHO

Agua Sarca farm is located in the Nuova Segovia region, in Nicaragua, at 1400/1500 masl. Is a 69 hectars farm completly dedicated to coffee growing. In this farm we can find 7 different beans variety and more than 300 coffee tree.
His founder Isacio J. Albir, starts his coffee journey more than 30 years ago and, now a days is one of the most innovative coffee grower in Nicaragua.

FROM THE CHERRY TO THE BEAN

After the selection of the ripest cherries, all of them are anaerobic fermended (without oxygen) that can allow to express other aromas and flavours of the coffee. After the fermentation the cherries are depulped and fermented again covered with the “coffee cherry husk blanket with ice on top”. The beans are covered with coffee husks and ice. This second aerobic fermentation help to express sweetness, cleaning and uniformity in the cup. At the end of the second fermentation, coffee are washed and lets dried on beds. 
 

ABOUT THE VARIETY

MARACATURRA

This variety is an hybrid between Maragogype e Caturra. Discoverde in the late 1800 nowadays is a common variety in Brasil, El Salvador and Nicaragua. Coffee trees grows bigger and with bigger cherries. Can be very suscetible to Roya (a diffuse leaf disease). The most common aromatic profile is characterized by tropical fruit and bright acidity.
