WHERE AND WHO
At the helm of El Silencio farm is Robinson Rivera Muelas, a farmer with a very long history in coffee production. The farm is located at 1750 meters above sea level in the heart of the Cauca region, specifically in the Piendamó district. Production is almost exclusively focused on the Caturra variety with small adjacent plots of Castillo. Robinson also plays an important role in the local association AAC, which actively works towards a better and more sustainable approach to coffee cultivation in the region.

FROM THE CHERRY TO THE BEAN
This batch of coffee undergoes the natural process. The cherries are hand-picked to ensure the correct degree of ripeness and uniformity of the harvest. They are then placed on raised beds and the cherries are periodically moved to prevent the formation of mold during the drying period. Once the correct residual moisture level is reached, the cherries are stripped of all the dry parts and stored.

ABOUT THE VARIETY

CASTILLO

Named in honor of the researcher Jamie Castillo, who collaborated with Cenicafe in 2005 to create this variety, the Castillo variety was conceived as an improvement upon the Colombia coffee variety.

It boasts resistance to coffee leaf rust (roya) and has quickly become the most widely cultivated coffee in Colombia, also thanks to its high yield, resistance to other common diseases, as well as its smaller stature which allows for a higher planting density.
